On Wednesday, September 24, TOKO will host a special dinner as part of Tartu Cocktail Week.
This autumn, experience an extraordinary culinary journey as Head Chef Klaus Lemmats and Head Bartender Koit Brent Laasme create a four-course dinner, with each dish paired with a specially crafted cocktail.
DINNER MENU:
AMUSE-BOUCHE
Pain perdu, onion marmalade, monk’s head cheese, autumn truffle
Welcome cocktail – Homemade gooseberry schnapps, sparkling wine, elderflower
BRIOCHE
Parmesan butter
CARPACCIO & FLAMBADOU
Arugula, marinated fennel, pepper glaze
This year autumn came a little early – Cherry gin, kale purée, sparkling water, basil foam
TOKO RATATOUILLE
Goat cheese, tomato consommé
MOUNTAIN CHAR
Sea buckthorn beurre blanc, wild mushroom duxelles
Cocktail for a sushi restaurant – La tomato, sesame-infused whiskey, green tea, yuzu + date, white chocolate
CHANTERELLE
Chanterelle toffee, brown butter ice cream, lingonberries
Blueberries on the silk road – Coconut rum, amaretto, Karukera rum, blueberry, milk, cinnamon
