Opened in June 2024, Hiis Restaurant is located just 30 minutes by car from Tallinn in Jõelähtme, Manniva village. We offer a 15-course tasting menu crafted from local ingredients and foraged natural produce.

Michelin Young Chef Award Winner

Hiis Restaurant is led by Chef Daanius Aas and Managing Director Kristiina Makušev. Daanius has worked in various top Estonian restaurants, most recently at SOO Restaurant, which earned a Michelin Green Star in its first year and where Daanius was awarded the Michelin Young Chef prize. Kristiina Makušev was responsible for SOO Restaurant’s service, and their successful collaboration eventually led to the opening of Hiis Restaurant.

At Hiis Restaurant, we offer a fixed menu to ensure a cohesive and harmonious dining experience. The 15-course menu evolves with the seasons, incorporating inspiration from the surrounding nature and personal experiences of Chef Daanius. Expect a combination of classic "home-style" dishes with seasonal ingredients.

From Nature to Plate

Hiis Restaurant was created to bring the flavors of nature and food production to your plate, showcasing ingredients that often do not reach our tables. Our team values sustainable cooking and foraging, aiming to change established mindsets and revive regional flavors. We prefer local ingredients from reliable partners, with some components coming directly from the Hiis Restaurant vicinity, including the Taju vegetable and herb garden or the surrounding nature.

Exclusively Local Ingredients

Our kitchen is deeply connected to Estonian ingredients and their seasonal availability. We avoid using ingredients like lemons from afar and strive to find alternatives from our surroundings. The menu features creative uses of familiar ingredients and surprising forest edibles. You might even find something innovative made from tree bark. Our restaurant creates a 15-course dining journey to showcase the brilliance of local ingredients.

Hiis Restaurant is situated just 30 minutes from Tallinn in Jõelähtme, Manniva village. We are located in a beautiful limestone building at the Taju complex, nestled on a seaside slope. Offering natural flavors in an ancient and heritage-rich landscape felt only natural, allowing guests to enjoy not just culinary delights but also a sense of tranquility.

About Our Location and Name

The Siimu ancestral farm has been in operation for centuries, reflected in the surrounding nature and heritage landscape shaped by human hands. The newly renamed Tammenõlva farm complex has been fully renovated under the care of the Taju family, using local limestone to blend old farm charm with modern luxury.

Hiis, in our folklore, was a sacred place where the spirit of nature was honored through rituals and offerings. We aim to be a contemporary sacred grove where nature is revered in all its glory. Our goal is to provide an experience that deepens understanding and appreciation of the origins of our food and ingredients.

Natural elements combined with the limestone building bring the outdoor environment inside, creating a cozy and refined atmosphere. The elegance and simplicity of the setting, along with the ease of our hospitality, ensure that every moment is fully enjoyed, with attention to every detail.

Special Events

In addition to our dining experience, we host various special events and offer picnic opportunities on the Taju Journey grounds. Private events can also be arranged.

The restaurant is open for reservations on Thursdays, Fridays, and Saturdays at 19:00. The dinner experience lasts 3 to 4 hours.
