Team.

The GOBI restaurant team is already familiar to Tallinn residents and visitors due to trendy projects in Rotermann Quarter, such as the Bruxx restaurant and the Gallery Cafe art café. To create authentic flavors, we have invited young and promising Georgian chefs to our team. They are well-versed in traditional cuisine while passionately embracing the idea of modernizing classics.

Head Chef.

Leading the kitchen is Luka Khinkiladze, who started his career as a young cook. Today, he is captivated by the art of culinary and acquiring modern gastronomic techniques. Luka has honed his skills in the world's best restaurants listed in the Michelin guide, curated several restaurants in England, Georgia, and Italy, and was part of the Georgian team at the prestigious Bocuse d'Or culinary competition in 2020.

Located in the historic Rotermann Quarter, our restaurant offers contemporary Georgian cuisine. You can find us at Rotermanni 14 in Tallinn.

Uniqueness.

The GOBI project embodies a modern Georgian cuisine restaurant. Our main goal is to introduce guests to the traditions of ancient Georgian cuisine in a contemporary culinary framework and to welcome guests warmly and hospitably. Our head chef's idea is to explore the gastronomy recipes and traditions of different regions of Georgia and modernize them using haute cuisine techniques.

Name.

"Gobi" is traditionally a round wooden platter used for sharing meals. Sharing a meal from a Gobi demonstrates the utmost hospitality and trust. Family members and guests traditionally used a common Gobi during meals, leading to the phrase: "let's eat from one Gobi," meaning "from one plate." People also say that the word "Gobi" is derived from the phrase "me-GOB-roba," which means friendship. But friendship itself symbolizes trust, understanding, respect, and loyalty to Georgians. Following ancient traditions, no party is held without a Gobi to this day.

Food.

A fusion-style kitchen, interpreted as fine dining-style contemporary cuisine. The menu features traditional dishes from different regions of Georgia, interpreted by the head chef in a modern context. We are responsible for the quality and unique taste of the food because we use old recipes, authentic ingredients, specially imported spices from Georgia, make our own cheese, and prefer fresh, farm products.

Interior.

The design of the GOBI restaurant was created by a modern and popular architectural bureau. The space is divided into two parts according to the concept: the main room with a bar area and an open bakery, and the chef's table area, where guests can taste the chef's gastronomic experiments. The hall is cozy and spacious: wooden furniture, warm soft light, lush greenery, and handmade clay decor. In the middle of the hall is a large wooden table. According to our idea, guests can share it with others, which in turn promotes a friendly and cozy atmosphere. Interior highlight: a fireplace with soft armchairs in front of it. It's a pleasant place to enjoy dinner and relax with the crackling of wood. The hall has 84 seats.

Wine.

We approached the wine issue responsibly, because grapes are not just fruits, but a symbol of Georgia's rich culture and gastronomic heritage. Not only did we recreate an authentic Georgian wine cellar, but we were also very careful in our selection of wine suppliers. We cooperate with 9 Georgian wineries. Their wines are the result of a unique terroir and the best winemaking practices. In order to preserve the flavor of the fruits during the winemaking process, the producers apply traditional knowledge and modernized methods.

Bakery.

The heart of GOBI is the bakery located on the ground floor. Here, our chefs make bread, pies, and the most important and traditional dish of Georgian cuisine - khachapuri - daily. Not only can you taste these bakery products, but you can also watch the baking process. It is a unique experience and an opportunity to get acquainted with Georgian culture.

Kitchen.

On the second floor is a large and modern kitchen. It is a lively and highly complex mechanism where dishes made from meat, fish, vegetables, natural cheeses, and sweets are prepared. Everything that reaches the guests' table within moments is created here by professional chefs and their assistants.
