FYR Bistronomy & Bar: A Neighborhood Restaurant with Its Own Spirit and Identity

In the heart of Oslo lies FYR Bistronomy & Bar – a restaurant redefining itself as a true neighborhood gem. FYR aims to welcome locals and guests from across the city into an informal atmosphere where great food and drinks take center stage, free of pretension.

"Our goal is to offer delicious food without any fuss," says Sebastian Myhre, chef and owner of FYR Bistronomy & Bar. "We make food people enjoy, and we want our guests to feel like they can stop by for a casual dinner or just a snack and a good drink. FYR shouldn’t feel like a place you only visit for special occasions."

During the summer months, FYR sees an uptick in visitors, thanks in large part to its outdoor seating and a light summer menu. But Myhre emphasizes that the same kitchen, with the same dedication to flavor and quality, is behind the menu indoors. "We want people to know that we’re here all year – with food that’s always honest and simple. There’s a special magic in sitting outside in the park with food that matches that vibe, but inside we have one of the country’s most charming and atmospheric interiors, and the food is just as delicious and easy to love here. With us, you can simply drop by!"

FYR 2.0 – The Concept Is Not Being Tied to a Concept

With what they call FYR 2.0, the idea is to move away from a rigidly Nordic focus or being overly “correct” in a technical sense, and instead embrace the simple, rustic, and downright tasty. The menu is playful, fun, and exciting. The star of the kitchen is a large charcoal-fired Josper grill, which imparts incredible flavor and aroma to the ingredients. "We follow trends where it makes sense, but above all, we want to create a space where our guests feel at home," explains Myhre. "This is the kind of place where you can relax, enjoy great food and drinks without feeling like you have to dress up or spend a fortune."

FYR is ready to show Oslo’s residents that it can be the area’s cozy living room – a vibrant and cool spot for food and drink. For those looking for something more upscale, FYR has its sister restaurant, Stallen, complete with a Michelin star. The restaurant is suitable for all occasions. In addition, there’s a lounge perfect for drinks, great wines, and plenty of tasty snacks from the kitchen. For industry folks or foodies, the chef’s counter offers a front-row seat to the kitchen action, where guests can soak in the lively, fast-paced atmosphere.

"We hope more people see FYR as a natural part of their neighborhood – a place for snacks, delicious food, drinks, great wine, and, at the very least, the entertainment of an open kitchen and a lively restaurant vibe," Myhre concludes.
