Fjordenhus

The new restaurant LYST is in the iconic building Fjordenhus in Vejle. Fjordenhus is located on the water and opened its doors in 2018. The building and the LYST restaurant were both created in close collaboration with Danish-Icelandic artist Olafur Eliasson.

It is a unique building made to be different with zero straight-angled walls, and the chosen colours were chosen to reflect the sky and the ocean. Inside, the art is exceptional yet minimalistic.

 

The Philosophy of Lyst

The well-anticipated restaurant LYST opens its doors in the Fall of 2019. It is a unique restaurant with the potential of being unlike anything ever seen before in Denmark because of its iconic location, high-end culinary experience and below-the-sea-surface extensive wine cellar. The philosophy of LYST is to tie gastronomy, art, architecture, and environmental responsibility together.

The restaurant seats only 30 people, ensuring a unique dining experience from the beginning to the end. The ingredients at LYST are carefully selected and chosen from the Mid- and South of Jutland to ensure staying rooted locally.

 

Anchored in Local Life

The building is anchored in Vejle Fjord, just as the restaurant is in the local life surrounding Jutland. Working closely with Olafur Eliasson, the kitchen ensures to capture the essence of the building and bring it to life within the culinary arts.

A daily changing menu inspired by weather, time, seasons and cultivation, guarantees a unique experience, which will consist of twenty locally sourced servings, all rooted in the four elements of water, fire, air and earth. All dishes are locally sourced ingredients, and to achieve maximum sustainability, they source all their ingredients within a 100-mile radius of the restaurant.
