Restaurant HOS
In February 2019, restaurant HOS finally opened up their doors to incoming guests. The restaurant is on Kongensgade 65, and despite it being a new restaurant, it has already gained tremendous praise from guests because of its spectacular cuisine.
Focus on modern smørrebrød
Come inside and enjoy the new lunch-restaurant in Odense! The menu offers delicious modern smørrebrød (open-faced sandwiches) as well as smaller a la carte dishes. No matter what you choose, you are guaranteed the absolute best. HOS has a big focus on both sustainability and organic produce, and the dishes are all based upon Danish ingredients, which is something that can be tasted in the food. Every Friday and Saturday night, you can explore their à la carte menu, full of tasty snacks and delicious dishes.
The couple behind the name
The name HOS is an anagram composed of the first letter in each of the owners' last name, Michelle Hemme & Jakob Spolum. They both have many years of experience from some of the country’s most renowned restaurants.
Jakob Spolum graduated as a chef from Ruth Hotel in Skagen, where he worked as Head Chef afterwards. He has also been Head Chef at Restaurant Pasfall in Odense, Munkebo Kro, as well as been both co-owner and Head Chef at the famous restaurant Sletten in Humblebæk.
Spolums’ better half and partner Michelle Hemme is a trained waiter from Sortebro Kro. After finishing, she was a restaurant manager at Kok & Vin and has worked at Uformel and Michelin-starred Formel B. She has experience as a deputy manager at Sletten and as a restaurant manager at Ruth’s Hotel in Skagen. Besides the already impressive resumé, Michelle Hemme is also a trained sommelier and a member of the Danish Sommelier Association.

It’s essential for your experience that you, as a guest, are seen, heard, guided, waited upon when it comes to the food and the delicious wine.
