Restaurant Textur is located on Vesterbro in the heart of Aalborg. The people behind the venture are Dennis Juhl and Frederik Østeraa, who last served as Head Chef and Sous Chef at the famous Ruths Hotel in the very north of Denmark. They opened the doors to Textur in September 2017, that offers affordable and delicious gourmet food.

Concept

The concept is quite simple. Textur has decided to have eight courses available on their menu, which then change every three weeks. This way, they're able to focus on each dish and every ingredient. The goal is to make the best dish with every single ingredient in its peak season and to make sure it’s used to the best of its potential. With the frequent change of their menu, they’re at the same time able to follow the ever-changing supply of local vegetables, fish and meat. The main goal for Textur is to use as much of the material as possible to avoid food waste. Sustainability is the way forward at Textur.

Menu or À la Carte?

The menu always offers the possibility of a set 3, 4 or 5-course menu including a paired wine- or juice menu. It’s also possible to order all of the set menu courses as à la carte dishes. There are always vegetarian- and fish options available on the menu. A menu starting price is 333kr for 3 courses. À la carte starts at 95kr.

The Beverages at Textur

The wines at Textur are natural wines as they have no added Sulphur as opposed to classic wines. The wines are chosen from the heart and with sustainability in mind. The juices are made in-house based on seasonal offerings. The water at Textur is from Denmark because they see no reason to have bottled water imported. It is run through an activated carbon filter and is only 25 DKK for ad libitum.
